Ingredients:3/4 cup cornmeal1 1/4 cup sugar1 1/2 teaspoon salt1 Tablespoon baking powder1 3/4 cup flour1/2 cup vegetable oil1 cup milk2 eggs Method:1. Mix flour, cornmeal, salt, baking powder, and sugar in a large mixing bowl.2. In a separate bowl, blend milk, eggs, and oil until well mixed.3. Using a mixer, slowly add the liquid ingredients to the dry ingredients, mixing just enough to incorporate.4. Spray a 9×13 baking pan with non-stick cooking spray and pour the batter into the pan, spreading evenly.5. I will try this recipe.This is soooooooooo much better than Jiffy. That used to be my go to until I found this. I always thought Jiffy was kind of flat and dry but this is so moist and fluffy. Wonder if it would taste the same if splenda were substituted for the sugar.I don't care what the Splenda folks say, I haven't found things to bake the same when Splenda is used instead of sugar.
