We've got a whole bunch of phone numbers for different parts of the Fort here, but nothing for Trails End.

 

I'd go with Dave's suggestion and call the front desk. 

 

I did find an article on Gluten Free dining at WDW from July 2011 that included this...

Trail's End Restaurant at Fort Wilderness Resort and Campground- we had our first meal at their dinner buffet. The chef walked me around the buffet to show me what was safe and then he made up a special plate for me in the back. Hot Ener-G rolls were delivered to the table just as my meal of glazed salmon and multiple types of vegetables arrived.

I called the front desk number and was transferred to the restaurant. I got to talk to the chef who was SUPER helpful. My friend that will be dining with us is going to be super excited about all of her options!!!! Lots of what they serve is already gluten free, and they can make special versions of things like pizza and mac & cheese.

Awesome!  If your friend feels inclined to submit a review of what she ends up getting, or any other info on gluten-free options, I'm sure there are others that would be interested.

I'm going to see if they can get me some steak fries for my takeout chicken at Trail's End.

I didn't know you were thinking about the pizza. I've seen them make a gluten free pizza for a guest before.

Probably still tastes like cardboard though.

We weren't but I was just sharing options. But she hasn't had pizza in 10 months, so she said she might try it.

I did email them, but the info was very general. It was just a blanket email response about some options at various dining places. There was nothing about Trails End or Mickey's Backyard BBQ, the 2 places I asked about.

All kidding aside, the people gettting the gluten free pizza seemed like they were regulars, and they seemed like they were looking forward to eating it.

 

I guess they at least knew there weren't getting some premade frozen pizza.
