Crock Pot Chicken Pot Pie

I don't do "fancy" and I love the invention of the crock pot. This one is a favorite of my kids:

Slow Cooker Chicken Pot Pie

Ingredients:4-5 frozen boneless, skinless chicken breasts

  • 3 cans of mixed vegetables
  • 2 cans cream of chicken soup
  • 8 oz cream cheese
  • 1 can of crescent rolls

Instructions:

  • In slow cooker, add the chicken and vegetables (add the juice from one can and drain the other two). I usually use frozen veggies, and it works just fine
  • Add cream of chicken soup, and cream cheese.
  • Cook for 6-8 hours on low.
  • About an hour before you about to serve, put crescent rolls on top of chicken mixture, in a flat layer, and cook for another 30 minutes.

You can cook it either way. If you are pressed for time, it will probably cook a bit faster if you cut it first.

Most of the time I cook it first, then chop it up before putting the crust on top.
