shoreline99 137 Posted February 13, 2011 Report Share Posted February 13, 2011 From 'Cooking with Mickey around the World', 1986Pioneer Short Ribs and Pioneer BBQ SaucePioneer HallFort Wilderness Campground ResortYield: 4 Servings4-5 lbs Beef Short RibsSalt and Pepper to TasteSeason short ribs with salt and pepper and bake at 350 degrees F until nicely browned, about 30 minutes. Pour off any accumulated fat in pan. Cool ribs. Set aside.Barbecue Sauce1/2 cup tomato paste1/2 cup cider vinegar1/4 cup dry sherry wine1/2 teaspoon Worcestershire sauce1 teaspoon dry mustard1 teaspoon bbq spice1 clove garlic, finely chopped1 cup catsup1 tablespoon soy sauce1/4 cup salad oil1 teaspoon liquid smokea teaspoon salt1/2 teaspoon white pepper1/4 cup sugar1 1/2 teaspoons cornstarch3 tablespoons waterCombine all ingredients except cornstarch and water in a saucepan and bring it to a boil. Dissolve cornstarch in water and stir into sauce. cook and stir until mixture boils and is thickened. Cook 2 minutes. Makes about 3 cups.Dip cooled ribs into barbecue sauce and place in a baking pan. bake at 325 degrees F for 1 hour or until ribs are tender. Quote Link to post Share on other sites
