According to a press release from Ocean Spray back in October, the 2011 Epcot Food and Wine Festival will include a real live cranberry bog (where? no idea — World Showcase Lagoon?)! And the Fifth Annual Ocean Spray Cranberry recipe contest will also be a part of the Epcot Food and Wine Festival this year. (Of course, this is all subject to change… .) Cranberry Bog This is all due to the recent relationship built between Craisins brand dried cranberries and the Walt Disney Company. DebbieT11 5 Posted June 19, 2011 Report Share Posted June 19, 2011 I'm thrilled that Disney's got some additional offerings - keeping it fresh.Now, can we also chat here about the Swolphin's Food and Wine Classic?? We'd heard *such* good things about it last year, and were really looking forward to attending.... made our reservations specifically to cover this date. But dang, they've raised the price of the causeway only ticket by $15 to $65, and it's only good for 3 1/2 hours! There are only 9 food stations and 17+ beverage stations. OK if you're a wine/drink lover, but we're not big fans. Plus, last year there was an option to buy tickets only to be used for individual food stations..... this year that option's gone. So, sadly, we won't be attending..... we'll just stick with a few afternoons at Epcot's F&W instead. Dang, I was sooo looking forward to this, too. Just way overpriced and undertimed.....lol. On three select Sundays during the festival, guests will have the opportunity to attend a Chocolate Discoveries Seminar! Patterned after the popular Food and Wine Festival Cheese Seminars, Chocolate Discoveries will allow guests to first sample four different chocolates in their natural bar form while a presenter discusses the flavor variations. Then, guests will have the opportunity to taste a savory dish made with chocolate, desserts made with chocolate, and even chocolate-inspired wine and cocktails! Chef Marianne Hunnel As you know, I was given the opportunity to speak yesterday evening with Marianne Hunnel, Area Manager, Event Content Development for the Epcot International Food and Wine Festival. She has a job that seems to be in equal parts exhilarating and difficult — and she loves it! Without further ado, let’s jump into what I learned about the Epcot Food and Wine Festival and its true headliner, Marianne Hunnel! At the end of this post, we have a few pieces of news about what you’ll find that’s new at the 2011 Festival!How A Festival Comes Together With five years of directing content development for the Epcot Food and Wine Festival (six festivals altogether), Marianne Hunnel is an expert at shepherding her small, mighty team when it comes to building something bigger and better every single year. Of course, her 15 years working as a Chef on Disney World Property doesn’t hurt in terms of knowing what Disney guests are looking for when it comes to a dining experience! Planning and development for these 45 festival days takes all year, and includes a lot of research. The first place they turn? Last year’s Food and Wine Festival guests! “[We] take a look at feedback from guests — what people liked, what was not doing very well. We really listen to the guests.” After taking stock of what you, me, and the rest of the guests preferred last year, the team begins scouting the global trends taking over the food space and begin putting together menu items and tastings. To get unique and authentic input, Hunnel and the team speak with cast members — especially those hailing from countries represented in the World Showcase Marketplace Booths — to collect ideas, reviews, and even family recipes! According to Hunnel, the festival should always be “interesting, exciting, and educational.” Trends and Concepts Affecting the Epcot Food and Wine Festival Healthy DiningAn ongoing focus of the festival is healthy dining. “[We are] trying to incorporate fresh and healthy foods that are indigenous to the regions represented around the marketplace. …And we do it in subtle ways. Guests can say, ‘Wow, you can eat healthy and enjoy going to a festival without feeling really guilty,’” says Hunnel. In fact, a new event focusing on families and healthy dining will take place on October 29th, featuring Andrew Zimmern and two other celebrity chefs, Bryan Voltaggio and Chris Cosentino. The event will “show the Chefs as Dads. They’re going to have their kids with them, who will be showing techniques that the family can do together,” says Hunnel. The evening will also feature non-alcoholic mixed drinks to pair with the meal! MixologyThe art of mixing beverages will be a focus of the festival this year. And while mixology was a small part of the Festival last year through a few seminars and the Grand Marnier tastings, in 2011, “every day at 6 o’clock will have a designated mixology class at the beverage seminar,” Hunnel says. “Start your evening happy hour over at the Festival center to watch the experts do mixology techniques.” Xante In fact, the art of mixed drinks and specialty spirits will be popping up in the World Showcase booths as well! Hunnel and her team search long and hard to find beverages that are indigenous to the areas represented in the Festival. For example, the Scandinavia booth being re-introduced this year will feature the Xante Sunshine cocktail. According to Hunnel, “There are wines in Scandinavia, but you don’t often see them imported; so I was looking for something that would be different. Xante is a pear and cognac liqueur, and the aromas alone are incredible. At the festival, it will be served as a tasting by itself, or in a cocktail made with elderflower.” Craft BeersLast year’s 15 Beers for 15 Years was a huge success, and craft beers are making a comeback this year. “Eight craft beers from around North America will be featured. One will be Canadian, but the rest, including IPAs, are from other parts of USA,” says Hunnel. New England Lobster Roll at Epcot Food & Wine Festival Sustainable FoodDisney World has been working steadily to ensure that the huge amount of food consumed on property each year fits a stringent set of sustainability guidelines, meaning that the harvesting of that food does not destroy ecosystems or food sources via negative practices or over-harvesting. At the 2011 Epcot Food and Wine Festival, Hunnel and her team will be working with Linda Bean, granddaughter to late Maine retailer L.L. Bean, who promotes using wild and sustainably caught Maine lobster meat. Bean will be providing storyboards about the subject at the Hops and Barley booth — where Maine lobster will be served.What to Expect at the 2011 Epcot Food and Wine Festival Here are a few tidbits we received from Marianne about new and returning events at the 2011 Festival. Hopefully these will help those of us planning to head to the event between September 30 and November 13 to dedicate our time wisely! Chocolate Seminars Introduced:Chocolate Discoveries Seminars will be introduced at the 2011 Epcot Food and Wine Festival this year. Occurring on three select Sundays, guests will be able to explore chocolate in its sweet, savory, and even liquid forms! Mixology Seminars Introduced:Mixology Seminars will take place every evening at 6pm in the Festival Center. These will be the designated 6pm beverage seminar for the day and will feature techniques delivered by Mixology experts! Kitchen Memories Special “Family” Dinner Event: Featuring Andrew Zimmern, Bryan Voltaggio, and Chris Cosentino — and their kids! Get on board for a fun event that’s all about family and healthy dining on October 29th. VIP “Sweet Seats” to Debut at the 3D Delicious Dessert Discovery Events:In the tradition of Wine View Lounge upgrade (which will return in 2011) at the Party for the Senses, the 3D Delicious Dessert Discovery events will this year introduce the option to guests to purchase Sweet Seats for an extra cost. These events are low in cost (or free!), and are held at the Festival Welcome Center in Epcot’s Future World. Booking will be available on August 16th. It’s likely that discounted pricing will be available Monday-Thursday for Tables in Wonderland members, Disney Vacation Club members, and Annual Passholders. Details are subject to change.FESTIVAL WELCOME CENTER (Open daily 9 a.m. – 9 p.m.)Culinary Demonstrations Price and times TBA. Theme Park admission required. During these 45-minute culinary demos, guests will learn valuable tips from professional chefs and wine presenters. Chefs will create one of their own dishes in a show kitchen on stage. Enjoy taste-testing the finished dish and sipping the wine pairing! While we don’t know many of the demo dates or times, we do know that Raglan Road’s Chef Kevin Dundon will host demos on Wednesday October 19th and Thursday October 20th. The event was held in the Wonders Retreat, one of the 'hidden' event rooms that are in many of the Epcot pavilions. The Wonders Retreat is above the main floor of the former Wonders of Life pavilion. Since the pavilion ceased to be the Wonders of Life, it has hosted many events during the Flower and Garden Festivals as well as the Food and Wine Festivals. Up above the area where the Body Wars attraction used to be, you can see a row of windows -- that's where the Retreat is. The food we were served was a preview the samples that will be served in some of the kiosks (or "International Marketplaces" that will join the many others encircling World Showcase during the Festival. The three new kiosks this year will be Portugal, Hawaii, and the Caribbean. We also tasted food from another booth, Scandinavia, which is making a return to the Festival this year.For our buffet reception, we were treated to: -- Kalua Pork Slider with Sweet and Sour Dole Pineapple Chutney and Spicy Mayonnaise (Hawaii)-- Swedish Meatballs with Lingonberries (Scandinavia)-- Shrimp on the Barbie with Pepper Berry - Citrus Glaze (Australia) Our appetizers were: -- Seared Sea Scallop with Kumara-Red Curry Puree (New Zealand)-- Apple Radish Salad (New Zealand)And for the entrees: -- Ropa Vieja (Braised Beef) with White Rice (Caribbean)-- Jerk spiced Chicken Drumstick with Mango Salsa (Caribbean) Ocean Spray Craisin Bread with Butter Wines paired with the entrees were an Argentinian chardonnay and an Australian shiraz. Our dessert trio included: -- White Chocolate Macadamia Mousse with Dark Chocolate PearlsTres Leches Verrine (Caribbean)-- Pastel de Nata (Portugal)The pastel de nata was a delicious egg tart pastry made famous in Portugal. They better get ready to serve about a million of these at the Festival. It was that good. Wow. We had a unique Apple Ice Wine from Canada along with the desserts. Our hostess, Pam Smith, spoke about some of the effort and the planning that goes into the Festival. About halfway through each year's Festival, they start sifting through the feedback from guests as they begin preparations for the following year. She introduced Greg Cannon, the chef who oversees all of the food kiosks. Greg spoke about the intricacies of putting all the kiosks together, how they decide what will be new and what will change or be retired from previous years. Pam also introduced David Buckley, the Imagineer who works on many design projects for Walt Disney World. David has designed the banners, posters, and many of the large visual displays which will highlight the theme of this fall's festival, "Passport To A World of Flavors." There are many new events this year. A few of them include The Discovery of Chocolate, the return of the Vertical Wine Tasting featuring Napa Valley's legendary Freemark Abbey, Mexico Tequila Lunch, Italy Food and Beer Pairing, Italy Dessert and Wine Pairing, Italian White Truffle Lunch, a Best of Bocuse Dinner, and a real, live Cranberry Bog. Not sure if we'll all get to play in it, but it's going to be between the Fountain (behind Spaceship Earth) and the entrance to World Showcase. It's not easy to get a sense of how they manage to put the Food And Wine Festival together every year, and keep it going for 45 days. 'Remarkable' is hardly the word for it. Living in Orlando, I can vouch for the fact that it is the most-anticipated yearly event for us locals.On the weekends, it's always crowded with area residents.
