rdancemom... Pam 113 Posted April 16, 2011 Report Share Posted April 16, 2011 CHICKEN MARSALA INGREDIENTS1 Ea. Chicken BreastDredging All Purpose Flour1/4 Cup Extra Virgin Olive Oil8 Oz. Mushrooms (sliced)1/2 Cup Marsala1/2 Cup Chicken Stock2 Tbls. Shallots (finely chopped)Salt & Pepper to TasteMETHODPound chicken with a flat meat mallet until 1/4 inch thick. Dredge chicken on both sides in seasoned flour. Sear in hot oil until golden. Remove from skillet. Add mushrooms and shallots, season with salt and pepper. Pour in marsala and reduce. Add stock and simmer. Return chicken to the skillet and heat chicken through. I get the recipes and I love duplicating things at home every once in a while, but am ashamed to admit that my idea of cooking more often than not means calling ahead for take-out or a reservation. :rofl2: Of course, once I get past the embarassment, there's a plus side to that too - we don't need to keep that many pots & pans in the TT or do a lot of dishes...
