Conveniently taking place during the Epcot International Food & Wine Festival and located just a short walk from Epcot?, this event offers foodies the ideal opportunity to continue their culinary experience after enjoying the festivities at Epcot?.Special packages including guestroom accommodations will be available as well as wristbands allowing you access to all the food and beverage offerings!What You can ExpectWhile our Second Annual Swan and Dolphin Food & Wine Classic is still in the planning stages, we thought we would share with you some pictures and seminar descriptions from the first annual event so you can get an idea of what to expect!Our First Annual Swan and Dolphin Food & Wine Classic which was held October, 2010, was an exciting day for our culinary staff as they wowed patrons with their culinary brilliance.The evening began with six seminars offered by our very own food and beverage experts. Participants elevated their knowledge from wine appreciation to wine wisdom with a Bordeaux Blending seminar, others took part in a Sake Hour to learn about this enticing Japanese beverage. Other seminars available included Mixology, Beer, Bubbles, and Riesling. These seminars and others may also be offered in 2011!Participants Chose From the Following Educational Seminars:WINE BLENDING SEMINAROur certified sommeliers believe there is no better way to truly learn about wine than to taste it! During this hands-on seminar, we will break down the components of barrel samples while discussing the origins of the wine, review the plush varieties of grapes, and take a step-by-step look at the delicate wine making process. The real fun begins with an opportunity to blend your very own meritage! Become more adventurous and knowledgeable about the art of wine and always purchase the right bottle for any occasion.Instructor: Tony Porcellini, Director of Food & Beverage/Certified Wine SommelierRIESLING RENDEZVOUSDiscover the broad range of Riesling styles. Known mostly for its highly aromatic and sweet honey flavor profile, we will discuss (and taste!) both dry and sweet variations as well as light to full-bodied alternatives. The versatility of this noble grape allows for pairing with anything from salads to seafood to sweets. Expand your beer horizons with micro brews and craft beers from around the world. Discover the process behind different brews and their impact on the food and beverage industry during the past few years as well as future trends. After completing a lesson on the brewing process, enjoy a personal tasting of the multiple styles of beer and perfect food pairings for any meal.Instructor: Adam Bagwell, Restaurants Manager BUBBLESLearn the basics of champagne, including the importance of the grapes, land, climate, and viticulture to the process. Be introduced to the five key regions of Champagne and the different champagne styles in all areas of the world. Hone sight, smell and taste as we finish with a blind champagne tasting. We were at WDW for 5 days and I came across this event by accident while reading a blog and it turned out to be such a wonderful experience! We attended the Beer, Please! workshop and it was great! We were so impressed we plan to come back next year. Thanks for putting together such a high quality experience for us.??I just wanted to take a moment to tell you how much we enjoyed the Food and Wine Classic. We are long time fans of Swan-Dolphin but you folks far exceeded our expectations on this one!
