Tokyo Dining at Epcot...https://disneyworld.disney.go.com/dining/epcot/tokyo-dining/menus/ We went last November for the first time in a while and enjoyed it very much. A couple of thoughts...While we enjoy Kona a lot (partly because it's convenient to the Fort) the menu is pretty set and they aren't super likely to make you anything special or off menu like you'd expect at a typical sushi restaurant. I think that's more likely to happen at Kimonos and even possibly California Grill. Before the renovation at CG the original sushi chef that was there would create special dishes if you sat at the sushi bar, but she has since retired and I'm not sure whether they'd do that now. If it wasn't for your update about Morimoto I wouldn't even have thought about Sushi. It was the article saying there will be a Sushi bar upstairs that got me thinking. My parents were there on Tuesday and said the place was a mess, both construction- and traffic-wise. If it's that bad on a random Tuesday, I'll hate to see it when it's busy season.
