First Peek at Trattoria al Forno, New Restaurant for Disney’s BoardWalkposted on July 15th, 2014 by Pam Brandon, Disney Parks Food Writer With opening planned for December, we’re sharing the first details for Trattoria al Forno, the new restaurant for Disney’s BoardWalk. A “trattoria” is an Italian restaurant serving simple food, and “al forno” is Italian for “food baked in an oven,” and this new spot will showcase Old World techniques, including handcrafted mozzarella made daily, cavatelli (small dumpling-shaped pasta) and a variety of Neopolitan-style pizzas baked in wood-burning ovens. Neopolitan pizzas, by the way, are pizzas in the classic style of Naples, Italy, with simple tomato sauce and fresh mozzarella. A beautiful Italian flywheel slicer slices paper-thin Italian meats, served with a variety of olives and caponata. Satisfying pastas, velvety seasonal risottos and fresh seafood and vegetables will celebrate the delectable diversity of Italian cuisine with authentic ingredients and recipes from Italy’s various regions. Italy is just half the size of Texas but has wonderfully diverse cuisine, and Trattoria al Forno will showcase dishes from Italy’s various regions – for instance, braised beef Bolognese with house-made cavatelli from Bologna, semolina tagliatelli carbonara from Latium (more specifically Rome), pork chop alla Milanese named after the city of Milano. And you’ll find classic Italian favorites: chicken breast alla Parmagiana with tagliatelle pasta; shrimp with garlic, capers and anchovy butter with polenta; whole roasted fish with roasted vegetables; baked lasagna; grilled steak; slow-cooked lamb shank with polenta; and eggplant rollatini. A seasonal risotto will always be on the menu, and vegetarians will appreciate the ruffled campanelle pasta with green beans, roasted potatoes and Genovese pesto. Add a classic Italian dessert with an after-dinner cappuccino for a perfect ending. Look for tiramisù, lemon panna cotta with almond crunch and berries, gelatos, and the signature bomboloni (Italian donut holes) with dark chocolate and vanilla gelato. Wines will be 100 percent Italian from historic wine regions including Tuscany, Veneto and Piedmont, with over 60 offerings by the bottle and more than 25 wines by the glass – Chiantis, Super Tuscans and fine Italian white wines such as Prosecco, Pinot Grigio and Moscato. Signature cocktails and Italian beers and sodas round out the drink menu, with a signature-blend Italian coffee roasted just for Trattoria al forno. Its final day will be Sept. 30. Reservations will be taken for meals through that date. A "new concept" -- but unidentified -- restaurant, will take its place later this fall, a Disney World internal memo said. "Walt Disney World regularly reviews and updates the portfolio of food and beverage offerings here," the memo said. Cora and Walt Disney World released a joint statement on Monday. "After five successful years operating Kouzzina by Cat Cora, we have decided to move on to new opportunities," it said. "We are very appreciative of the amazing Cast Members who made Kouzzina by Cat Cora such a popular destination. Our collaboration has been an incredible adventure and we are very proud of the restaurant we created and the experiences we provided to countless families who enjoyed everything Walt Disney World Resort has to offer. It is our hope to work together again in the future.” The restaurant, owned and operated by Disney, opened at Disney's BoardWalk in 2009. A restaurant called Spoodles was previously in that BoardWalk location. Kouzzina is fronted by celebrity chef Cat Cora, daughter of Greek restaurateurs, who shot to fame on reality TV show "Iron Chef America." Kouzzina is the Greek word for restaurant. Kouzzina, open for breakfast and dinner, seats about 200 customers. Other BoardWalk eateries include Flying Fish Cafe, Big River Grille & Brewing Works and ESPN Club. I'm not buying the spin they're putting on it. Unlikely a truly "successful" restaurant closes after only 5 years. We never tried Kouzzina. The outdoor seating remains, as does the walk-up pizza window. Inside crews are still working to complete the preparations for opening - with private test meals underway over the next few days (view menus). The casual Italian eatery will open for guests on December 18 2014 offering both breakfast and dinner. The drink menu features a variety of beers, wines, and specialty cocktails. The drink menu’s front page Rossini is equally vibrant in color and flavor, with light and bubbly prosecco amplified by wild strawberry liqueur. Starring starters include the kale white bean soup (in a surprisingly large bowl – very filling) and Caprese salad (beautifully plated). While there is no cheese plate or course at Trattoria al Forno, there is an enjoyable assortment of sliced meats and olives – enough for two. The Truffle pizza packs a strong truffle oil flavor in place of red sauce, lightly topped with cheese, able to be savored with every bite. Smoked Prosciutto and Potato pizza is particularly unique, tasting like a whole meal in each bite. Another excellent entree is the Braised Beef Bolognese, featuring one of the menu’s two freshly prepared pastas in-house, the cavatelli. (The other is the tagliatelle that’s served with the Chicken Breast alla Parmigiana.) The beef is fork tender, easily falling apart with a gentle tug. The dish is covered in a hearty red sauce, which is clearly cooked with the beef, which has infused into the rich sauce. If anything, this dish needs a little something to brighten it up, as it’s nothing but savory flavors. Dessert is the weakest of the courses. The trio of cannolis is fantastic, each containing half pistachio filling and half chocolate chip. But the Lemon Panna Cotta, while delicious, is almost entirely lacking its namesake lemon flavor. The Piedmont Hazelnut-Chocolate Cake is absolutely nothing special, with the accompanying oranges and hazelnuts topping the cake serving as the best parts. Quote Link to post Share on other sites
