I'm tickled pink, a nice piggy kinda pink! There is certainly some fat involved (like on a good piece of bacon) but nothing to get skeeved about. I agree that the smudge of beans looks a bit gross in the picture, but when have refried beans ever looked good. I love the dish so much I made that pic my wallpaper on my ipad! I agree. I would get "skeeved" about the fat on the pork belly. The only thing I use that type of pork for is boiling it up with a big pot of navy beans. It then going out with the garbage.
