I've always wanted to try it but worry that it would overcook and we wouldn't have breakfast. Our oven in the RV stinks, so it would be a great solution if it turns out well. You can just leave them out, I'm sure. When my friend bakes hers in the oven, she just does the egg/milk/cheese/meat. I do steel cut oatmeal add a little salt, chopped apples, raisins, brown sugar and cinnamon. Not a casserole but its yummy, warm and smells awesome! That does sound good. It was a little more "done" around the edges but that didn't stop anyone from eating it. And sorry, Gwen, it does include hash browns.I will see if they will send me the recipe and will post it up. Helmsey......Todd 134 Posted October 22, 2013 Report Share Posted October 22, 2013 Ok, here is the recipe for the picture I listed above: 1 bag 26 oz. frozen hash browns12 eggs1 cup milk1 tablespoon ground mustard1 16 oz. roll sausagemaple, sage or regular sausage.Salt and pepper16 oz. bag shredded cheddar cheeseDirections:Spray crock pot and evenly spread hash browns at the bottom.Crack 12 eggs in a large bowl, mix well (and slowly) using a whisk.Add the milk.Go ahead and sprinkle in the ground mustard.Add plenty of salt and lots of fresh pepper. Mix well and set aside.Cook the sausage on high heat, drain and set aside.Add sausage on top of hash browns.Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.Mix it up well. Or good, depending on where you're from.Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.Turn the crock pot on low for 6-8 hours.Some fun variations of this recipe. We used bacon(cooked and diced ahead) bell peppers, onions and cheese with a recipe similar to the one above. It was good. I used extra hash browns. The sides do get a bit crispy, but still good.
