Brunswick Stew- And it was YUMMY!

Recommended Posts

I'd been craving Brunswick Stew, so I decided to make some. I found a recipe online and modified it a bit. It was awesome! It had just the right amount of heat while still being mild enough for everyone to eat it. Here is the recipe with my modifications. It makes A TON, so you could easily half it if you aren't cooking for a crowd.

Brunswick Stew

Ingredients
1/2 pound salted butter
3 cups (2 large) finely diced sweet onions
2 tablespoons minced garlic
1 teaspoon cayenne pepper
1 tablespoon freshly ground black pepper
1 tablespoon salt
1/4 cup Worcestershire sauce
1/2 cup vinegar based BBQ sauce
1/2 cup sweet BBQ sauce
1 pound smoked pulled pork
1 pound smoked pulled chicken
1 pound smoked chopped beef brisket
3 28 oz cans crushed tomatoes
32 oz drained white & yellow corn kernels
4 cups of diced potatoes
1 quart chicken stock or broth

Directions
Melt the butter in a large saucepan over medium heat. Add the diced onions and the garlic and saute until the onions are translucent, about 15 minutes. Transfer to large stock pot. Stir in the cayenne pepper, black pepper, salt and Worcestershire sauce. Simmer for 5 minutes then add both types of BBQ sauce. Stir in the pulled pork, chicken, and brisket. Add the crushed tomatoes and corn. Stir in the chicken stock and let simmer for about an hour. Add potatoes and continue simmering for another hour.
