GaDawgFan.....Kelly 799 Posted October 21, 2013 Report Share Posted October 21, 2013 I'd been craving Brunswick Stew, so I decided to make some. I found a recipe online and modified it a bit. It was awesome! It had just the right amount of heat while still being mild enough for everyone to eat it. Here is the recipe with my modifications. It makes A TON, so you could easily half it if you aren't cooking for a crowd. Brunswick StewIngredients1/2 pound salted butter3 cups (2 large) finely diced sweet onions2 tablespoons minced garlic1 teaspoon cayenne pepper1 tablespoon freshly ground black pepper1 tablespoon salt1/4 cup Worcestershire sauce1/2 cup vinegar based BBQ sauce1/2 cup sweet BBQ sauce1 pound smoked pulled pork1 pound smoked pulled chicken1 pound smoked chopped beef brisket3 28 oz cans crushed tomatoes32 oz drained white & yellow corn kernels4 cups of diced potatoes1 quart chicken stock or broth DirectionsMelt the butter in a large saucepan over medium heat. Add the diced onions and the garlic and saute until the onions are translucent, about 15 minutes. Transfer to large stock pot. Stir in the cayenne pepper, black pepper, salt and Worcestershire sauce. Simmer for 5 minutes then add both types of BBQ sauce. Stir in the pulled pork, chicken, and brisket. Add the crushed tomatoes and corn. Stir in the chicken stock and let simmer for about an hour.
