New England Clam ChowderLiberty Tree Tavern, Magic KingdomIngredients (Makes 6 Servings):1/2 cup celery, diced small1/2 cup onions, diced small1/2 cup green bell pepper, diced small1/2 cup butter or margarine1/2 cup all-purpose flour24 ounces clam juice1 12-ounce can chopped clams, with juice1 quart milk1/8 teaspoon thyme1/4 teaspoon salt1/8 teaspoon white pepper2 cups potatoes, cooked, cut in 1/2-inch cubes Directions:In a 4-quart saucepan, melt butter or margarine. Add celery, onions, and green peppers. Saute about 5 minutes until tender. Add flour and cook an additional 5 minutes to form a roux. Stir in clam juice, chopped clams, and milk and bring to a boil. Reduce heat immediately and simmer for 15 minutes. Continue stirring while chowder thickens. Season with thyme, salt, and pepper and add cubed, cooked potatoes.
