If it were me, I would see which parks Josh recommends on the days you are there, and make some FP+ there, trying to get the important ones around 11am (not too early so you have to rush, not too late so she is getting tired.) Then, if you miss them no big deal. Just relax and enjoy your vacation!

I don't think it has been a year since the taco salads. I got some there twice last fall when I was at WDW with my kids. They were really good and we were sad when I read that they had been pulled from the menu.
